I think Killer Brew may be onto something. Easy sparge with 58% wheat and then lower than expected efficiency. My money is on too coarse a crush for the GF +/- something gone awry with your mash pH.

Oxygenating today's brew. 1L/min using a medical oxygen reg. and a 2 micron scintered stone. Here's what it looks like. Bubbles break the surface and mound up by approx 2cm in a 5cm radius. Good layer of foam across the whole wort after a minute.

I will try 60 instead of 90 secs at 1L/min for my next Bitter. 90 secs has been woking well for me using Wy 1056 and Saisons 3724/3711 when I'm aiming for a dry finish.

Jaysus! No wonder the hopocalypse is a comin'. Brewing an APA this weekend with FWH to 15 IBU. After reading this may significantly increase the amount of Citra and Galaxy added to the hop stand. Citra only for dry hop to avoid Galaxy's grassy flavours.

Ha ha! Yep Parks, I'm doing the same thing, except am varying the starter size based on the yeast viability calculator to target pitching amount plus 100B cells. This is usually a 2L starter for me, as my yeast can be at least three months old.
