I had the same issue and just recently entered a comp where you had to brew onsite with your own gear and I decided to "cube" my brew to make it faster BUT didnt cube it till it was below 65degc and did all my sub 20mins additions as per normal......I came second so was a great brew.

Any copper cable will do as thats the whole reason behind 3/4 wire RTD's is that the cable resistance doesnt really affect the RTD output but in saying that I wouldnt go much over a few meters if we are going longer that that we use a temp transmitter which changes the ressitance to a 4-20mA...
Another thing to seriously consider is the current switching abilitys of both......I feel way more comfortable switching high current drawing elements with a SSR as opposed to a STC-1000 I'd hate to have STC relay fuse shut and melt down on me.......I deal with a lot of temp control instruments...

Once I got temp control I dove right into lagers with great results trying everything from di-rests to crashing etc etc etc..........I can hardly drink anything commercial now due to the horrid wheat/rice tastes that come through straight away.

Stuff it I pulled a pint(In keg for 5 days at 12psi)........Its GOOD bit bitter but I know there is hops there as in sneezing the same as I do while making the brew hahahahahaha......If it gets better with age it will be cracker.....Bitter lager type.
