I've read before that you can add "Beano" or similar to a beer and it's enzymes further break down carbs and long chain sugars, making your beer drier and low carb. Never tried it.

I've found Ella to be extremely resinous and leave a harsh bitterness, even added @ whirlpool. Haven't actually used it yet @ 60. I love it for dry hopping though. I get a lot of tropical / pineapple from it.
Belgian strains can be finicky with bottle conditioning. I've had that experience with wlp530 in a Dubbel. Went for 3.0 volumes but probably never got about 2.0.

Evaporation in a sealed container? That doesn't sound right. Maybe you checked volume when still hot then cooling shrinkage accounts for lower volume..?
