    Auto Lysis

    Thanks guys :). That makes sense. "passage of nitrogen into the wort" - I assume this is the yeast's proteins and DNA (both of which contain N)... of the two I'd imagine the DNA would degrade very quickly, proteins though would probably hang about - it could be these causing the vegemitey...

    Steeping Grains

    Hi Guys - Thanks guys!! I should clarify I've never boiled the grain - but I have steeped it in boiling water. Will not in the future ;) - what difference does the temperature have? I would have assumed that the temperature of the water would speed the dissolving of any soluble compounds...

    Hi Jason - Thanks for that :). and you add the products of this small mash to "extract style" brewing? Damn acronyms - I thought LME was light malt extract and DME was dark malt extract.

    Hi All - Last question for today, promise :huh:. I've made a few batches where the recipe has called for x grain to be steeped in boiling water for x minutes etc. I've done this without really questioning what it actually adds?? Can someone explain to me what I am adding when I do this...

    Hi All - As some of you know I was looking for a Bass recipe. PM (post modern - as opposed to post meridian, private message, particulate matter etc :P) suggested a "partial" mash. How does this differ from a full mash? - and could someone point me in the direction of a website that explains...

    Hi Jovial - Thanks for that (might try it after our other porter (a TCB WetPak) is finished!)... Are there any lighter "dark" beers? Why are these better in the warmer weather? Cheers - Cero.

    Looking For Inspiration

    Hi All - A mate and I currently have a range of brews: a few largers, ginger beer, a pale ale and a porter. I am looking for inspiration on what to put down before it heats up :). We are not all that experienced (I've never made any mash-type recipes)... but would be prepared to give it a go...

    Hi Doc - Made a batch of your fine ginger beer recipe - tastes great (and that's before bottling LOL!). How long do I need to leave it to mature? Is it like normal beers (ie: 4-6 weeks??) or can it be drunk earlier. Will keep you all posted as to how it goes ;). Cheers - Cero.
