I have read a number sources that say some breweries in Cologne ferment under pressure. Here is one such 'source';

The question is does anyone know what effect this has and why they do it?

I often lager under slight pressure in my kegs, I do it to ensure there is no oxygen uptake and to help seal the lid.

It should be noted that German breweries (and even most German homebrewers) ferment their beer under pressure.

I was imagining some sort of pressure check valve in your airlock, although 15 PSI as one article I read suggests you might struggle with the plastic barrel fermenter.

Some googling suggests fermenting under pressure slows down yeast growth and reduces esters & fusel production.
