Nasty Mistake?

OK... so today was my first extract brew.. to be conducted with Green Bullet hops from Ross (CraftBrewer).

Started OK got LDME and dissolved 3kg in boiling water... added 40g hops at start of 60 min...
Taste... yep sweet.

I steeped some specialty malt which I thought was chocolate... (had a label but I forgot to check in my disorganisation).

after 20 minutes boil taste wort... some bitterness... excellent

I pitched old left over dried yeast (couldn't find the Safale I know I have somewhere) into about 2/3rd of the steeped malt and remainder (wort from say 15gms worth of steeped grain) I added to boil.

added 10gr hops at 15 min to go... add 1 kg dextrose.

check yeast... not much action... stir... (not really expecting too much to be happening yet)

add 10 gr at 5 minutes to go...

Taste wort with rehydrating yeast for sweetness to check if I should expect yeast activity (again not really going to tell me anything but was interested)...

Thats not chocolate...

found the bag I had re-packed it into... sure enough Roast malt.

I steeped and added maybe 100gm chocolate malt to try avert the disaster I was predicting.
I think I should have switched the dextrose with added LDME if I had known... (some might say dextrose is never the best option)

What have I created?

PS turfed the rehydrating yeast in the steeped "roast" malt and (being a Sunday) had to make do with going to buy a kit from supermarket to steal the yeast (I figured they would all use the same crappy yeast so just picked one)...

now in the fermenter (fingers crossed)

I'd say you made a robust porter, of sorts, or maybe a hoppy stout. How much roast and how much choc ended up in the beer?

Let your tastebuds tell you if it will be good. Did the wort taste OK, or haven't you sampled the wort yet (out of the hydrometer flask, perhaps)? My Arrogant clone tastes great, out of the flask. Sorry if I rabbited on too much about the Arrogant clone, while we were pubbing on Saturday, but ya gotta be proud of good beer.

In a nutshell...

15gr roast malt
around 100g chocolate malt
3kg LDME
1kg dextrose
40gr + 10gr +10gr Green Bullet hops

Previous experience tells me the roast will be noticable and I will have a dark amber colour from the choc and roast. I guess I am hoping the choc malt rounds off the roast taste... and the hops should give good roundness/complexity.

I am optimistically expecting it to be tasting very full and good, just not light and hoppy like I was aiming for...
Had intended to use...

15gr chocolate malt (mostly for color)
3kg LDME
1kg dextrose
40gr + 10gr +10gr Green Bullet hops

Has anyone tried small amounts of roast malt in a lighter beer?

I've chucked about 30g into a red ale for colour (along with a good few cups full of melanoidin). Gives a nice reddish hue in small amounts.
 
15gms of roast malt wont add much really, compared to the amount of choc.

I think you would have a nice beer.

G'day Darkhorse,
Looks like a basic dark ale or porter - sheesh, 15g of roast is bugger all mate - barely enough to sweat over, and the 100g of choc malt will be nice. Pity you didn't use a grunty yeast - a Wyeast 1028 London Ale yeast would do this recipe nicely - you might find it a tad bitter with all those hops and a kilo of dextrose on top of the LDME will certainly thin the beer out somewhat. Its not that I hate adding dextrose, but it tends to work against you if you're after a malty full bodied beer.

Regardless, it should be ok - let us know how it tastes in a couple of weeks.

Not over the hops and yeast. Can you taste the roast in a Killkenny?
 
Them Green Bullets are mighty powerful and I think they will hit like a .44 Winchester. You will end up with about 50 to 55 IBU so you wont know the roast is there.
 
OK... several weeks on and its all bottled...

Don't usually use a hydrometer but did so this time to check attenuation... around 1.020!!!

Created a basic yeast starter and added... but still not below this level... must have a busted hydrometer...
Should've stuck to my previous policy of ensuring temp is ok and wait for 2 day of no airlock activity (but wasn't sealed properly this time!

So...
tasted the first off and yuk!!!

Not a roast malt problem... way too bitter for my taste... like VB on steroids (although, unlike VB, there is underlying flavour).

Will have to let it ride for at least 6 months to mellow.
Oh well, its more of a summer beer anyway!

Lesson: Green bullets can do serious harm if not used with caution... could've used around 1/2 the quantity.

I have 30grams left... maybe I'll do just that! ;)
 
I'm with Tony.

Roast will be the least of your worries.

Green bullet hops are pretty assertive at the best of times. If anything the roast may help to balance your hopping. :D

All that aside you should still wind up with a pretty good, albeit robust beer. :beer:
