Ipa And Cheesecake

Heard that on one of the brewing podcasts (cant remember which one) tried it out... perfect.

The more insanely bitter the IPA, the better it works. Something like the Squire Speculator would just be fantastic with a nice new york style baked cheesecake.

I guess it's the same as a coffee with dessert. The bitterness balancing out the sweetness. Got some cheesecake to spare then?

I actually just bottled my xmas in july stout, and had made some cremer brulee for dessert that night. It went absolutely amazingly, I was quite surprised, even the mrs thought it was nice! There is something to this beer and food pairing. Anyone know any other excellent matches with food?
