    The Fridgemate Rocks

I gotta say, the Fridgemate really rocks. Very simple to setup and combined with a heatpad, belt, lightbulb in fridge, or whatever heating method you use, it makes brewing so much easier. In Sydney we have just had 2 days of winter weather out of the blue. My brew room (AKA the laundry) dropped...

Bulk Priming Advice: Should I Rack Twice?

Jase, You pretty much want to bottle straight after you have added the priming sugar so that secondary fermentation happens in the sealed bottle (causing carbonation). Typically you would rack out of your fermenter straight into your bottling bucket which has your priming sugar solution in it...

Bulk Priming Advice: Should I Rack Twice?

Hi All, I have a wit beer that has been in the fermenter for about 2 weeks now. I racked it once after primary had finished because I wanted to pitch a new batch onto the yeast. So the first batch in now in second fermenter and has been sitting basically idle for about 6 days. I am about to...

My Recipe For A Chimay Bleue Style Brew (so Far)

Hey Trev, Did you end up making this brew? How did it go? One question, when you add the sugar to the primary on day 3, do you just sprinkle it in or do you dissolve it in water first? Bring it to the boil? How? Thanks, Steve...

    Failed Yeast Cultivation?

Sorry guys. That was a typo. It HAS NOT grown in volume. I had a closer look and there are tiny tiny tiny, and I mean tiny, bubbles in it so maybe it has done something? Looks sus to me though as I have never seen a fermentation yet (beer or wine) that doesn't have some sign of activity. I...

    Failed Yeast Cultivation?

Hi All, I tried to cultivate some White Labs yeast to create a bigger starter and to bottle some for a future brew too but I think I have failed. Heres what i did: 1. boiled 4 cups water in a pot 2. Added 100g LDME 3. Stirred till it came back to the boil (about 2 mins) 4. Put the lid on the...

    Help Please

Hi, I just racked to the secondary. Tastes pretty darn good. I'm happy with it so far. I definitely don't think it is light on bitterness so I think i got lucky. OG=1075, SG at racking = 1010 so she is a bit of a monster at approx. 9%. TFM

    Boiled Belgian

Hi, I have just checked the SG and i think it has fermented out pretty well. OG=1.075 Todays SG=1.010 which is about 9.2% !! I've racked to the secondary and will let it sit for a while. Tastes pretty good, has a very interesting back pallet - a bit like burnt cigars (not to different to a...

    Boiled Belgian

I think the high temp did finish the ferment. Or, it crashed due to me letting get down to 17C. Either way there is not more activity. I have bought it back up to 22C now and I am going to rack to the secondary and give it a very gentle stir and see what happens. I'll post back the details...

Phillip, Do you know any brew shops that sell belgian candy syrup? I was reading about it yesterday and it's easy to get in the US (The Northern Brewer) but i can't find any here. Have you ever used it? TFM

    Lovibond Of Dask Crystal

Hi, I bought some Dark Crystal Specialty grain from my LHBS and I am just trying to run my recipe through a couple of the beer recipe tools to get some analysis. When it comes to adding crystal they have several options of varying color. For example: British crystal 50-60L British crystal...

    Lyle's Golden Syrup

Hi All, Just wondering if anyone know's where you can buy Lyle's Golden Syrup in Sydney or if not then what else could you use to a similar effect. I'm trying to make a Belgian dark strong ale and the recipe calls for 450g of Lyle's. Thanks, TFM

    Boiled Belgian

Yeah and as I understand this yeast works best at the upper end of that range and even a tad over - helps bring out those pongs that belgians are famous for. TFM

    Boiled Belgian

Hi All, I am about 3 days in to Belgian blonde ferment using White Labs WPL530 Abbey Ale yeast. I had a heat belt around the fermenter using it to keep the brew around about 22-24C. The fermenter also happened to be sitting on a heat pad that I did not turn on. My lovely wife came a long and...
