    Who Skims In The Kettle?

    Hi all, Just wondering who goes to the trouble of skimming off the scum that rises to the top of the kettle at the start of the boil. Cooks always do this when they make stock as all the impurities float to the top as a foamy scum. Who skims? Geoff.

    Steep Time For Aroma Hops

    I've just done an APA with 30IBU of hops. Cascade and Simcoe for bittering and Cascade and Saaz at flame out for Aroma. I steep for 20minutes and agitate the hops in the hop sack after the flame out. My problem is my beer has a sharp hop taste. Not unpleasant but certainly not integrated like...
