    Chocolate Milk Stout

Ive used the choc cream in a stout before, the whole 50ml bottle to a 19L keg added a really upfront chocolate flavour, too much for me, would have rathered it be less intense, would add half next time.

    Best place to buy kegs

Nail & head there, add a cheap Chinese disconnect and slightly off tolerances on both equal an empty Co2 cylinder. But on the other hand, gas is cheap and damn those Chinese kegs are a bargain nowadays!

Is my local homebrew shop giving me good advice?

The M44 US West Coast is a good yeast but perhaps a bit sluggish at first. US-05 is the equivalent yeast, Ive used both and they perform equally well, US-05 however has been in the market a lot longer if that makes any difference. If you going to use Liquid Malt Extract remember 1kg of Dry...

First try at cider.. May have failed

At 1.000 you have little sugar left in the wort, should be fine using 2 drops per tallies, you will have a very dry cider with that low reading, hopefully the lactose will help some. And also with those reading you have a 7.2% cider... a real party starter. Smells funky... what does this mean...

    Kits and Fruit Juice

Be careful using any fruit juice that has preservatives in it, the preservatives are used to stop spoilage and growth of bacteria and/or yeast. Small amounts of juice may be OK i guess as the amount of preservative would be diluted but I would either stick to the non preserved juices in the...

    Ginger Beer brewing sugars

I would ditch the grain, save it for a beer recipe, unless your after a ginger flavoured beer as opposed to a traditional ginger beer. Google a ginger beer from scratch recipe such as: http://www.thehopandgrain.com.au/brew-ginger-beer/ and follow those. Probably dont need the lime/lemon...

What's the availability of gear and ingredients like in thailand, would think the homebrew market to be pretty non-existent over there?

    Dunkelweizen

Yep Ill do a separate mini mash, ill replace the smoked malt with the smoked wheat as per the original recipe in the first post. Ok so a extract is fine at 60min and is predominantly that length due to the hopping/bittering schedule I take it.
