    'battle Of The Toucans'

Gotta give someone a THANK-YOU from many pages back.......think it may have been a "Pete" - glass of this brew in his avatar pic....... Made the Coopers Stout + Dark, 250g LDME, whacked a few pieces of licorice in a short boil with a dose of EKG, all into the fermenter with a starter of...

    Are Extracts Worth The Effort?

I do both extract and K/K with judicious use of hops, spec grains and appropriate yeast. (liquid for spec ales or US05) Can say though the extract ones cost me 50% as much again and they are only slightly better beers really, if at all. Great post, i have been wondering whether to do Kit or...

    Coopers Pale Ale Clone

LOL........ i have done just a dozen beers and my coopers pale ale effort was my most drinkable beer (mind you it is a forgiving style) You need to re-culture the Coopers yeast from the sediment in the pale ale bottles for a true CPA clone, but my recipe is simply..... Coopers Pale Ale tin...

Dark Ale, Ok To Use Some Brown Sugar?

I've made decent beers with BE2 (Coopers Product) and some extra malt. The brown sugar and other sugars will dry and thin the beer a little, the brown sugar and candi sugar in my belgian ale was great but it makes the beer quite dry. My opinion is that you can make better than the commercial...

    Porter Kit Recommendations

Thanks for that Robbo, looks a goodun! Shed101 - my recipe that was, well not a disaster, but it was not the brown porter i wanted and was too strong in caramel and molasses flavour (i don't like dessert beer) Coopers Dark Ale Tin ( too dark  ) Morgans Caramalt...

    New Brewer Here

Welcome to the obsession mate! Like any hobby, you can get fanatical and into the science of it all, but it can also just be a simple fun way to make great beers, and cheaply too! I am just six months in and what has been said above all great advice, i read the book, read the articles on...

    Dry Hopping Coopers Pale Ale

Any US hops starting with "C"...... i like coopers too but using the US-05 and a dozen variables on malts and hops makes pale ales that are nice, just a little different each time. Yet to taste a bad one. Mick.

    Porter Kit Recommendations

Some great info supplied from everyone. My first foray into this style and I made a rookie mistake and it ended up too dark and very much like the dark ale i did the batch prior, i used a dark ale/stout type mix of grain for steeping, and the same S-04 yeast. I did have some success though...

    Coopers Dark Ale K&bits

Just thought I would add that I have been making a similar brew and been steeping a dark ale grain pack from the lhbs (choc malt and crystal) and it has been a winner with a fuggles short boil and 04 yeast. My latest variation leans towards a brown as i have used some Caramalt LME and also...

    James Squire Golden Ale

Guys I made an extract version of JSGA with Morgans Caramalt LME, Morgans Wheat Malt, 250g Crystal steep, all Amarillo, US05. It's good but something's still not right, thought i might try a kit version. Thinking I will use wheat malt, and steep Caramalt grain as per Dr Smurto's suggestion...

Second Brew = Straight To Extract

This is an interesting topic as i had just fallen into the trap of doing Extract brews very early on, and asked for help. Without a clue on the boil gravity concept, and without taking note of my total boil volume, i was putting too much malt in too early and also using too much liquid in the...

Extract Brews Too Bitter - Help!

Scruffy you are right about beer being bitter :D THe thing is, for the style the bitterness comes in a bit hard in the aftertaste, and not in balance. I don't mind hoppy lagers or IPA's but that's what i expect to be tasting. My boil volume should have only been 5 litres. Anyway NQ...

Extract Brews Too Bitter - Help!

Had a look over the Brewsheet, how the malt additions affect the Boil SG and IBU's.....now it is starting to make sense. I don't know why my brew was bitter with quite a high boil gravity, but will use the Software next time and hopefully this will ensure a better result with my hops. Mick.

Extract Brews Too Bitter - Help!

thanks glaab for your help i dived in at the deep end with extract didn't I.......i hadn't read up on the boil gravity concept.... So i was using too much liquid for the boil, and did not need to have all that malt in there....i will have a look at beersmith and see if i can work it all out...

Extract Brews Too Bitter - Help!

Ok maybe this extract brewing caper is more complicated than i thought! I added the LDME at the start, then after the 45 mins added dissolved Candi Sugar which was 1 litre, and the LME was added right near the end of the 60 mins. I have tasted the beer from this recipe at my LHBS (without...

    Brewday - 19/3/2010

My Irish stout has a grain steep - 100grams Choc Malt and 100grams Roasted Barley, steep for half hour in a litre very hot/boiling water, lid on saucepan, then strain and rinse grains thru a sieve into another pan and boil that liquid for 10 minutes. Imparts a wonderful rich feel and roast...
