vannderal - The load of hops at the end is providing the bitterness as well as aroma and flavour. The later in the boil the hops are added, the bitterness is extracted (or the more hops you need for a particular level of bitterness). Being dumped in the cube is pretty much the same as being...

    Fishy Smell

As long as the sample tastes and smells fine don't worry about it. Some yeasts will through off some unwanted smells which get driven out of the beer by CO2. No need to rack unless there's signs of infection growing on the surface. Get rid of the lid completely and just use gladwrap and the...

    Should I Rack Or Not?

I don't rack anymore. After ferment is done I usually leave it for a few days to be sure, then chill it down and let it sit for a few days to help all the yeast to drop. Then bottle/keg when I have the time.

    Fat Yak Clone

king - put volume marks up the outside of the fermenter so you'll know pretty much how much the total brew volume is and the amount of trub. Total - trub = bottling volume. Drop the secondary as it doesn't really add much, just chill in the primary and ack to bottling bucket.

    Pear Cider Recipe Please?

just do 9x 2.4L Berri Apple Pear, malt, nutrient and yeast. Good thing about them is it's so quick to make, no mash, boiling etc, just the cost of the ingredients.
