    Black Wyeast!

My starter wort is the main wort. Being a disorganised bugger I just went ahead and brewed 40L of APA without a starter ready. To make up for my bad ways I elected to buy a brand new smack pack and use this in 3L of the main wort to step this up and pitch today. So I have 40L of wort to look at...

    Black Wyeast!

Yes will certainly be tasting these before pitching! I also have sent off an email to Wyeast with the batch number to see if they can tell me anything about it. I have a backup US56 that I may pitch into half of the wort if I get too worried.

    Black Wyeast!

Well I have 40L of APA sitting in the fridge chilling down to 20degC for pitching tomorrow. Bought a brand new wyeast 1056 American ale to go into them (sep 06 so fresh). Smacked the pack and it swelled within 4 hours. Just drew off 3 - 4L of wort to step this up overnight and when I added the...

    Sandgropers Xmas Case '06

Condolences Dave :( Well my brew is currently mashing so fingers crossed. Have so far managed to burn out my drill and trip the RCD twice from my dodgey kettle wiring. All I can say is that RCDs are a good thing! :o Afraid its another APA, it was next in my rotation so is what ye shall be...

    Houston Experiences?

Hey Ant, congrats on the job. I will likely be joining you although in Washington state so west coast and a bit cooler :). Can't help you with brewpubs in that area but was happy with what I saw in the part of Washinton I will be in. I have been pondering the same things as you lately (sitting...

    Balancing My Keg System

Paul, I have my chest freezer between 3 - 5degC @100kpa. Beer line is short but I also have restrictors mounted close to the shanks so I don't need much line. This post by Nearly was of great help to me in setting my system up when I started.

Squat 23 And 12 Litre Kegs

If thats for a brand new one then it sounds not too bad given they seem to be going for $100+ on ebay and the like? Can't help on the cheaper side of things unfortunately ... seen the old ones for $135 at beertech in Perth but if you can get a new one for $25 more then I would go for that.

    Perth Brewday Early Nov Anyone?

Afraid I'm out I will be in a plane on the way back from the US :) hopefully with some good news that they are giving me a job and I can spend a few years over there brewing like a madman :o I like the mash a full bag of grain idea! Will have to make it to the next one.

    Taps On Kettles

I reckon as low as possible and use a pickup tube/whirlpool to reduce crap coming out. I have some mesh over the end of the pickup tube and it works great. As DJR says, make sure you can get the backnut on if you are going weldless :)

    Over Fermented?

So was the sample you had carbonated at all? As everyone has said 10days is not long and at 12degC it is damn short. The sweetness you are tasting is most likely unfermented carb drops! I would leave em out of the fridge for 3 - 4 wks to let the yeast carbonate it up then fridge em and drink em...

    Underletting-pros & Cons

Gave this a shot on the weekend for the first time, worked like a charm. Just pumped in the right amount of hot water, quick stir and it was done. Much less stirring than my previous way of adding the water to grain and stirring madly. Can't see any disadvantages?

    Fining

I am a big advocate of gelatin, if I have a cloudy beer and don't want to leave it to settle long enough I pop 2 tsp of gelatin in 1/2 cup of hot (not boiling) water and onto the top of the keg. Guaranteed to be clear in 2 days (unless chill haze of course). I have never noticed any flavour...

    Automating A Brewery

WG, I would definately think about what tasks you want to automate now and in the future. Personally I can't see full automation being worth the effort. Steps 1 - 4 yes but I would want to have a mash stirrer or something to make sure I don't have a dough ball. Automated fly sparging would be...

    Automating A Brewery

How far are you looking at going? I have messed with some of the PC stuff and to be honest I found it to be a pain in the ass to have a PC in the brewery and eventually gave up. There are a number of PC based interface boards for reading data in and energising contacts. Not sure there are any...
