How Much Chocolate Malt Is Too Much?

Looks interesting, that'll age nicely. Should be a good drop for those cold nights if theres any left come winter. Don't worry about it - boingk

    Final Gravity

To be honest I'm not sure why you'd want much lower than that. 1.010 is a fairly reasonable FG for most lighter beer styles. 1.008 is fine if you're doing a light aussie ale but I wouldn't want to go lower. Most of my beers end up between 1.008 and 1.012 Try Nottingham liquid yeast, or US-05...

    Using Oak Chips

Hey there marrayr. I used oak chips in a porter once, to the tune of 150g thrown in the boil for 5 minutes and left in the fermenter for 2 weeks until bottling. It was absolute overkill. I'd say 1g/L to be pretty much spot on. Hope it goes well! - boingk

Lactobacillus Source - Inner Health Plus Capsules ?

Stuff it off and use one whole day-old can of opened [read 'soured'] Guinness in your next stout batch. Thats what the legit breweries in Ireland do, AFAIK, 3% by volume if I recall. Cheers - boingk

Is Specialty Grain Really That Good?

Sammus - yeah definitely boil the liquid, I generally use that as an excuse for a hop addition. Also sinkas is pretty much spot on, although the short and irritable contribution could be done without I agree. - boingk

Is Specialty Grain Really That Good?

Its brilliant, and lets you use kits as a base, rather than the main ingredient. For example, I like to make up a stout with a small mash of specialty grains instead of buying a stout kit (unless doing a toucan) as below: 1.7kg Coopers kit (lager, draught, real ale...whatever). 1kg LDME Sounds...

    Barons Brewery In Sydney

Good stuff, been waiting for these fellas to make a move into the big leagues. I certainly don't mind the beers from them I've tried and would like to see some more of their stuff coming my way! Best of luck to them. Cheers - boingk

    Master Blend Extract Only

Nope. Not even close I reckon. Sure they're premium cans of gear, but theres no way they'll compete with some guy in a shed slaving over a precise mix of grains and hops in a cauldron. Nice idea, but I'd stick with base malt extract and specialty grains. Hell, make up an extract brew with 3kg...

    Steeping Grains

I'll run you through what I have, as I brew some similar styles and have the grains there ready to go for most of them. Wheat [1kg] Crystal 60 & 120 [1kg packs] Chocolate [1kg] Black Patent [500g] That seems to cover the basics for most situations and then I've got some Munich and Amber malted...

    What's In The Can?

Long story. The cheaper kits are generally thought to be basic LME combinations with some isohop for bitterness only. Head up the line and its been brewed with real hops and then reduced down with vacuum evaporation techniques, giving bitterness and hop flavour and perhaps a very mild aroma. All...

    Pitching Dry Yeast Question

I prefer to make a small starter for the yeast, even if it just proves that it isn't dead (happens sometimes). A glass of your wort or even just a spoon of malt extract in a glass of water works a treat. I use 300ml conical flasks I got on the cheap and the work nicely. I'd say that even a...

    First Coopers Stout

Sounds great, always wanted to use molasses in a beer but never got around to it. Just bottled a stout I'm saving up for winter, too... By the by, I take it your a fan of Futurama. Same here, reckon its brilliant! Zapp Branigan has to be one of the best characters around, the 'rock, paper...

    Using Less Water In Brew

One interesting thing I remember from an old thread was on commercial-scale high gravity brewing. The consensus seemed to be that its a good practise as there seems to be more residual flavour components compared to a brew fermented at a more regular gravity, even after watering down the high...

What Can Go Wrong On A Brew Day?

Ouch, schooey, thats gotta hurt! My most recent incident was a bit dumb. I was doing a few kits & bits for the lastest round of stocking up and doing things inbetween like grain steeping and liquor boiling, bottling the last batch etc. Get the whole shebang up and ready and notice boiling grain...
