Thanks for the tips. Cherry Hefeweizen is what I'm thinking, more of a clovey yeast though. I reckon the banana flavours from some strains could compete with the cherry.

So, my friend has a little Cherry orchard and I want to see if I can make some beer with his awesome cherries. But, I don't want to make a heavier beer like a lambic or kriek. Has anybody out there brewed with cherries? I'm thinking along the lines of a cherry wheat beer?

From what I've read that's right, you add it with the yeast and it magically unglutenicises the beer. Or something. I have some clarity ferm and am trying it in a batch tomorrow. Although I am doing this brew for 2 family members who 'think' they may be gluten intolerant, so the results could...

I can't see any problem. I'll be using my brand new 95l kettle to do single batches. 8 litres is a lot of dead space though.

So, like an idiot I had the 12v PSU connections reversed when I started it up. I seem to have blown the display backlight, everything else seems OK. Is there a part number for the display? I need to replace it as I can't read it without the backight.

I was thinking of the brew bucket, no the chronical. Yeah a sanitary air filter was what I was thinking. Just trying to eliminate plastic where I can in the brewing process. As soon as we get a water tank, chilling is on the cards so maybe I'll wait.

Would it be silly to try no-chilling in one of these? Anybody done it? My idea would include allowing for the shrinkage, some kind of reverse airlock or something similar. Then you could suck out the break with the long racking arm and start fermenting.
