Lambic.. Good to go. What next ?

I agree i had overlooked that. Any yeast blend with the bretts should be finishing well below that. I just pulled a sample on my lambic with the same yeast blend it started at 1.049 3mths ago and it is at 1.008 already. Most likely different brewing procedures but as no tip states that is...

Racked berlinerwiess too late - oxygenation concerns

Why did you rack it? Taking it off the cake is only lowering the beers contact with all those yeasts and in the end is going to limit the fermentation of the beer if there was anything to eat still. How many months old is the beer? From my experiance and what i have read 3 months is plenty for...

How to bottle an unblended (therefore uncarbonated?) lambic?

Fill the bottle with a smaller headspace. Maybe half that of a regular beer. Being 9 months old i doubt there is many fermentable sugars left from the brett and solely the bacteria doing its thing which shouldnt produce too much CO2. I have drank a bottle of 3 fonteinen- Doesjel which is a...

    Rogue hazelnut brown ale

Being a 60min addition it should only impart bitterness to the beer. But if you want to stick to recipe try Chinook/Northern Brewer(U.S) Bookmark these charts they come in handy when cloning recipes without certain hops http://byo.com/resources/hops?style=2...

    Rogue hazelnut brown ale

Brewed a clone late last year and added the hazlenut liquor essence. 1 bottle in 23 litres was a bit too much in the keg but bottles turned out alright with tasting only just last week. Next batch i will either do the same and age a month or 2 more or add 2/3 bottle essence.
