Is your craft beer actually 'craft'? What the big brewers don&

Unfortunately IMO it is a turd. I got given one for XMAS and then bought the other at less than half price before I had drunk the XMAS one. Had one last weekend, had to force myself through it. Muddled malt profile, hot alcohol, lot of things that a good big beer doesn't have. Can't force...

    Asian-style meat tenderising

Awesome replies guys. I just went out and bought papaya extract. The chick at the asian supermarket knew exactly what I was talking about so that's a good thing. I will also try the cutting across the grain, thin slices, and cooking the meat separately in a very hot wok methods. Will report...

Dedicated Braumeister Guide, Problems & Solution Thread

It's been done correctly at my place, just thought I could get away with a cheeky one here and there at a friend's. Obviously not!

Really? The plug just looked normal to me, but I've never had that close a look at it to be honest. And if it trips the circuit what happens? Other stuff on the circuit just turns off and I have to go to the board and turn the circuit back on yeah?

    Asian-style meat tenderising

Hey Went to my favourite asian joint on the weekend and had the sichuan pork. Totally awesome, and so tender. Meat dishes at asian restaurants are always like that... when I do stirfries at home I can't come near replicating it. What's the deal? Do they add kiwi fruit to the raw meat first...

Dedicated Braumeister Guide, Problems & Solution Thread

^ That's impressive. I always worried about sanitising a plate chiller but the oven is a great trick and foolproof. Question - I have absolutely no electrical knowledge and want to take my 50l brau over to a mate's to brew. He doesn't have a dedicated 15 amp socket. What happens if I try to run...

    Feral Hop Hog gone bad

Golden Ace is a saison, which is typically carbed higher than a pale/golden ale.

Dry Hopping - when, how much and how?

I used to add dry hops near the end of ferment, now I add them in CC. The difference suprised me, both methods add something different and good, but I much prefer the CC addition as I find you get a more resiny, aromatic addition to the beer. I guess less of the volatiles are driven off by...

    Christmas Lotto 2013

Thanks for the feedback josh, great notes. Probably not the best weather for it right now, and I was a bit frustrated with persistent suspended yeast but apart from that I was pretty happy with it for a first go at an English IPA. Some of the haze is probably from the amount of hops used...

    making smack packs go further

Probably the easiest way to get more mileage out of a pack is to brew a beer, then keg/bottle it, then dump a similar style beer of similar or higher gravity onto the yeast cake left over in the fermenter. But as others said there are many ways to skin a cat, that's just the easiest (not...

    Australian IPA

Vic secret is quite nice... have a pale on tap that's fully single hopped with it at the moment. It's not what I expected, a bit of the fruit that you'd find in an american hop but quite subtle, a bit in common with something english like EKG too. A nice change of pace from in-your-face C hops...

Quality of disconnects.. do I need new ones..

What a timely thread. After two bottles of gas gone I have cracked it and am going to buy the Cornelius ones at g and g this weekend... 50 bucks worth of gas certainly justifies the hefty price.

    Debunking the raw food fraud/diet

Nothing over 42 degrees eh? That would render all Victorian produce in fields this week inedible.

    WTB 9ltr keg

I've owned one for a year now with zero issues. I'd take 2 at that price.

high gravity, dillution prior to pitch

Another option is keeping a 4 litre water bottle in the fridge at all times. 15 litres of high gravity from big w pot plus that = keg. Also only have to get the wort down to about 25 degrees in the laundry sink and you're good to go. Easier cooling in summer. That's what I used to do with tap...
