Slightly off topic, How do you go for temp control up there Dan, I imagine the swings in temp would be huge. Can you get a fridge mate onto a small bar fridge to keep your yeast happy?

Agree with this. Also waiting will give you the chance to notice the difference between naturally bulk carbing and force carbing next time. Worth it just to compare the different result you get.

My last time there was 2008. Fond memories of a beef tongue pie while it rained and Guinness foreign extra stout on tap that for some reason tasty very fresh. Haven't had it as nice before or since. Otherwise I didn't find to much in the way of beer. The street foods reputation speaks for itself.

rather than after fermentation is fully complete you could start the D rest, as kario mentioned, a couple or more SG above your terminal gravity to give the yeast a good chance of mopping up the diacetyl

I didn't know this thread did exist but had the same problem from the very first attempt. However I loosened the thumbscrews a little and that fixed it with a full 10kg of gran sitting on top. Mind you that's over a small area of feed in, about 2 inch diameter. I also run a slow 100 RPM to start...

No dramas, I'll be hitting up the brewing gods for a day off next week and putting down a double batch to cover the swap and the west aussie brew crew swap. Everyone will just need to save my bottle till the end of the case so it has the green edge worn off.

My local had a limit of 4 pp. I talked him up to six! I'll have a couple Friday.
