    Re-brew of ESB comp IPA that scored 36 and 39 for the NSW comp. From the comments of being too balanced for an IPA (ie ESB) I've up the Gypsum and lowered the CaCl. Also mashing lower for a dryer finish. I'm going to crash it first before dry hopping to try to avoid bad hop haze. Style...

    Hi Ben, I'm just wondering if there was something in particular that prompted this comment? From my side, I've enjoyed it being able to drink a whole bunch of different beers I may not brew myself. Not all have been to my style, but they've all been worth experiencing.

    Currently motoring along at 13c, down to 1.032. Any ideas on how long it will take to get down to final? Had sample, tastes like coffee and toast, great potential!

    Help on cider

    Yeah I would bump up the temp to 20c+. Not sure you really want a "clean" ferment with cider, it ferments so dry some esters make it taste like something. Other thing to remember is that cider likes conditioning time, 4-6 weeks if you can stand to wait that long without drinking it.

    I took the 20mins from here http://www.sfwater.org/modules/showdocument.aspx?documentid=4125 But that doesn't say how much water or how little is left. Other brewing sites say 2 hours for 5 gallons, including an article by deLange.

    Doing a quick google, chloramines can be removed with 20 minutes of boiling. Or a 1000mg vitamin c table will do a medium bathtub of water, I'm not sure what the bathtub to litres ratio is, but I'm guessing less than a quarter tablet would be required.     Any dead cells would act like yeast nutrient. Agree with SBOB, decant ant pitch away!

    Chloramine can't be waited out unfortunately. Sodium Metabisulphite is your best bet. I have a 1kg bag and add a scant pinch with my water adjustments. Very little is needed.
