    :icon_offtopic: Everyone always gets rid of their infected beers. I'd really be curious to taste an infected beer after about 5-7 years in the bottle. If it's **** jack, put a couple of bottles aside for 5 years and give it a crack. It could be interesting :icon_cheers:

    See how it goes. Remember, wild yeast doesn't conform to laws of the brewing yeasts we all know and love. If you boiled it for 2 hour, it would have killed most things. See how it goes, but maybe get a new fermenter for your next brews :D Remember for next time, brew earlier! :beer:

    The last batch they did, they actually supplied a map of outlets that supplied it. Selected outlets etc etc...... Except now the Quiet American is showing up in Woolies Liquor all over Melbourne. It mustn't be selling too well ;-)

    Be careful, my good mate is on a plane as we speak returning from San Diego. He was there for a work conference, but decided to hit up all the breweries. He broke his ankle and spent 2 days in hospital :rolleyes: Caveat emptor :P

    25g of saaz for 60 minutes might be your issue. How many litres was your brew? 25 litres at OG 1.046 with saaz at (approx) 3.7% AA will give you about 9 IBUs. Could be why there is a strong 'malty' sweetness. Dave
