    JD, Of course you know not to use sugar, use dextrose or one of those brew enhancer products, which are a mix of dex, corn syrup, and dried malt powder. Also try some of the Morgans range, they seem to turn out a well rounded beer with no discernable 'twang'. cheers BB

    Yoda, There is one school of thought that says to stir the yeast into the wort, and give the wort a good lifting stir for 2 or 3 minutes, to expose the wort to as much oxygen as it can. A well oxygenated wort will help the yeast take off in a hurry. cheers BB

    j, A good kit beer is Morgans Queensland Bitter, with 1kg of BE2 or similar (550g dex, 200g LDME, and 250g maltodextrin, with an added 1kg tin of wheat malt. I think they are now 1.5kg, in that case use 1/2 tin and save 1/2 for your next brew. cheers. BB

    Brad, At 10dC your yeast (if an ale yeast) is going to sleep. Keep the fermenter in a warm place and wrap a doonah around it, (see the 'Cheap Doonah' thread :rolleyes: ) or use a heat belt or summat. Temperature cycles in that range don't make for a fast or good fermentation. cheers Dave.
