    Dry yeast foaming on rehydration

    That's pretty normal I reckon. Mine sometimes get creamy and foamy if I leave them long enough. 1 hour is well beyond my timeframe for re-hydration though, I usually pitch around 20 minutes or so. Didn't happen to take a photo did you?

    I used to use gelatine, but haven't for at least 18 months. Biofine in the keg for Kolsch, lagers and any ales that I want to clear and it does the job perfectly without the jelly. I had a few occasions when I held the beer up to the light and could see bits of jelly in the beer. :barf:

    I don't use Brisbane tap water, but I'd be very surprised if it renders the Starsan useless, as your experiment 'proves'.

    Those strips are about as reliable as dipping your finger in to test the pH. You should buy a decent pH metre. I use cooled, boiled water for my Starsan, it turns cloudy very soon after mixing and the pH is always around 2.6, which is under the pH of 3, as recommended by Five Star to be...
