SOS - Mid brew STC-1000 temperature controller giving massive temp read errors??? 85c+

Jaycar have them. https://www.jaycar.com.au/10k-epoxy-dip-ntc-thermistor/p/RN3440?pos=4&queryId=d201cccf3d9c8bfe80f683167d048867&sort=relevance Just cut the old end off your temp sensor wire and solder on the new sensor, use heat shrink for the exposed bare wires for insulation, job done!

    Sanitizer use by date?

As Yankinoz says, being phosphoric acid and a surfactant/foaming agent (probably just "Labs Acid"), then it should be fine, but check the pH, it should be less than 3.5 and it will do its job apparently. You can make your own if you want, source some 85% Phosphoric acid (normal lab acid...

Bridging the carbonation gap (or the gap in my understanding!)

I do pressure ferment all the time, and you need about 20psi warm that will drop down by at least 10~16 psi when beer temp is around 2 degrees Celsius, and usually needs a bit of top up from the gas bottle as well I find. If you still have the flat batch, why not salvage them by using the...

    Noisy check valve

Well, to be precise, gas is not escaping back, its just pushing past a spring loaded valve (butt cheeks), and as it does, its chattering on the seat, effectively farting at you! I guess explaining back pressure might be like sitting down on a chair in an upright position and you can't make a...

    Noisy check valve

That's just the gas sneaking past the non return valve seat/seal and I wouldn't worry about it, as long as it stops any air flow going back the other way its doing its job. Sorta like fart gas sneaking past your bum cheeks and your butt is clapping with joy......😎

    Sparge volumes?

Too right there MHB, even a little tear off book of paper pH test strips would be better than nothing!

    Extra beer

Oh, yeah, forgot to say, I do pressure fermenting, so already carbed up, but you could dump it in and apply CO2 for a day or so, or just shake the **** out of it whilst applying CO2 for a quick gas up.

    Extra beer

There is a great resource for a bit of overflow nearby, use a couple of 2L soft drink bottles. They are already built for pressure, use the carb caps, the thread is the same, keep them out of the light and they double up as party bottles. If you only use a bit, re-gas them and back to fridge for...

    19Ltr Cornelius Keg refill

Yeah, but if you do the pressure ferm, then you save on CO2 and time spent getting the bubbles in there eh! Which means gettin it down the old gullet sooner :drinkingbeer:

    19Ltr Cornelius Keg refill

It'll be fresh, but acceptable, yep, pressure ferment say 15~20psi, make an ale 20º+ Celcius , monitor the OG~FG journey, yes it can be done, and I have done it! Of course it gets better as the weeks tick by sitting in the cans, but if you're in a hurry, it can be done as a freshy.
