I keep my CO2 gas bottle in the fridge with my kegs and so it permanently sits at around 4*C. I have a dual guage reg and the 'tank' guage seems to always sit at a particular reading (and I've just realised the two guages might be calibrated differently, so I won't give an absolute for the tank...

I consider the inclusion of Roasted Barley a major differentiater between the Porters and Stouts. The recipe above has ~5% Roasted barley - I usually shoot for 10% in a Stout so my guess is that is the reason it's down a bit in stoutiness ^H^H^H^H^H^H^H "Stout character". It's a bloody...

Yep, go with (1) but I'd recommend only enough gas pressure to ensure a seal on the keg. Yeast don't work as well under pressure (a bit like me!). Once you've given it the 4 weeks MINIMUM then carbonate to desired level.

I use no filtering on any of my lagers. After I bottle and make sure they're carbonated, I store them in the fridge as cold as possible for 2 or more months ... they come up crystal clear. The Stewards at the QABC are highly trained professional (drinkers) and will ensure each beer is poured...

I think we probably all look to the Ameriacan Homebrewer's Association with envy as the kind of thing that we would love to see here. AFAIK that organisation has a number of paid full-time positions and, with all due respect to the best intentions of volunteers, _that_ is what makes it work so...

hehehe ... I was thinking of carbonating in the keg then bottling from there, but now you mention it ... party on at my house in 2009 !!!!
