    Hop shots

The CUB efforts were all about wort economy and diverting beer to different brands based on spec, never about flavor Thankfully it's a flavor consideration for these sorts of options

    Hop shots

Funny that CUB whom were one of the worst culprits for hop extracts have gone away from using these and there is interest in using these in home brew ...

    Tap King product ending

My brewery supplier was asked to take part in the tender as he had done similar in the US for one of the big boys When he looked at the time frames and demands from upstairs he backed away and wished them the best of luck Working with both sides, sadly it will be a long time (if ever) the big...

    Blueberry hefe

We just made one at work. With the mash filter we used 95% wheat and 5% rye. Into 4000l we added 160 kg of frozen pulp once the ferment was done Probably only change would be to a more neutral yeast. Used a Munich wheat and it threw off some cloves which clanged with the fruit a bit Anyways...

    Anchor Steam Beer

I've been to the brewery and went right thru it. Was an amazing site The beer has a toastie breadiness from the yeast and the ferment temps. The smell of the ferment rooms is simply stunning. The hop pocket room is the same. Northern brewer is a derivative of the euros and I have made a few...

trying to get a brew into a commercial 50L keg

Nothing, but the ***** needs to be cleared. Cornies are much easier as we usually dump in and dump out. Have had a few guys sell beer to us using Iodophor and not clear it out and the beer taste like crap. Also the phos sanitisers are good for high turnover tanks still under pressure and cold...

trying to get a brew into a commercial 50L keg

The tangents are going everywhere, so to be short and sweet; * caustic is the best per pound cleaner in a brewery, the other cleaners sold are just marketing really. Caustic breaks down protein and fats (trub, beer ring, yeast etc), is cheap and easy to use as long as you be safe. Yes low pH...

trying to get a brew into a commercial 50L keg

hiya It is harder to carbonate a 50l keg in a rush than clean it to be honest. One way to clean without alot of equipment is to push the cleaning/sanitizers around with pressure from another keg like a cornie. Whilst exposure of caustic to CO2 will cause beer stone and neutralize the caustic, a...

Protein Rest - What Is It And Is It Handy?

Most of the time it is focused on processing, better viscosity in the mash tun and to also save filters, particularly if you use sterile cartridges or lenticular pad filters Malt with high better glucans causes me all sorts of grief on the mash filter at work. Aussie ale malts are less modified...

Craft Beer Industry Concerns - what is and isn't craft beer

So with a bit of history with this topic, maybe what we want 'craft beer' to be is not the argument. What it ain't is maybe the point. Beer is a food product. We went thru the 80's and 90's of consolidation. It happened, that's all fine. Maybe though, we like to see how things are made after a...

    Kegs, New vs second hand.

Been covered to Death Part II. You buy the beer in the keg. Add on a Euro 85 per keg purchase. If you were the Coogee Bay Hotel which does 500 kegs a week in peak, what would you do with all those kegs? Ahhh ... ummm ... There is no purchase/rental agreement, drink the beer, send back the keg...

    Kegs, New vs second hand.

Covered to death here, it's illegal. If you rent a car and do not take it back, is it yours? Buying 50l is much easier, KK AND Bintani can help. My Ops manager made a statement against a fella that had his house raided and they found our kegs. More charges laid for the fella

    Kegs, New vs second hand.

A type are the best option for a number of technical reasons. I have worked with a German spear supplier for a number of years, working on the approval cycle thru cub and lion Nathan successfully. Main reason to go d's is probably height. The kegs are 150mm lower and fit in keg fridges better...
