    Forgot to take a photo, but had my son's second birthday party on Sunday and loaded up the Aldi smoker with 60 Coles BBQ snags and hit them with smoke - created quite a few converts and tasted damn good in a bun with some coleslaw - nice snap to them.

    Same malt bill as Commissioner, magnum for bittering charge and then Mosaic flavour, aroma and dry. 35 ibus like the Commish. Drinking the bottled version now which has more hop on it than the pint I had off the keg earlier today. Still have 3-4 kegs of the stout, likely to still be on tap...

    Some Stout Advice

    Definitely want more bitterness to balance... I would be targeting at least 50 ibu with that og, maybe even a 1:1 bu:gu for greater balance. What temp are you planning on mashing at? This will also help determine the level of bitterness you want to target.

    I gave mine a similar treatment and just let them air out on the back porch until I was happy with the smell... took several weeks, but I got there.

    Yep.... Just the std 110. I only did a real quick smoke on them and just gave them a quick roll on the BBQ - but that was only because it was last minute and I needed to get kids fed.

    Yeast isn't the issue, it is that gelatin is made from animals - that's what they are generally concerned with. Bio fine clear is considered the vegan alternative... I haven't used it, but it looks quite promising.

    I'm pretty lucky - my local butcher makes amazing smoked bacon and kabana so no need to do an additional smoke run. Pretty sure I went to bed dreaming of smoked Coles snags last night ;0)

    I used hickory - a combo of chips and chunks. Some more shots - shoulder done Shoulder pulled Ribs ready to go I also threw some basic Coles BBQ snags in and hit them with smoke for 30 mins before finishing them on the BBQ. It was an amazing transformation and I would highly recommend it!!
