    Adding water to already fermenting wort?

    Just leave it. At worst you're short a couple bottles. At best you'll have a slightly better flavored beer.

    There are differing opinions regarding leaving trub in the fermenter and off flavors. Science and testing backs both to a degree. Doesn't seem to be a right or wrong just what works for you. I dump it all in and get good results.

    Carbonation

    Same bottles I use. My lids seal fine after multiple uses. Two sugar cubes is plenty for mine. Bottles are usually pretty firm in a week. May just need more time. Might try to get them somewhere warmer.

    Seems to be a problem with kits that come with small amounts of yeast. 6-7 grams really isn't quite enough for a 23 liter batch though it does seem to work for a lot of people. If you have a long spoon you can sanitize it then give the beer a stir, very gently. Sometimes getting the yeast...

    Two carbonation drops. What size bottle? You're sure the lids are tight and in good condition? I saw someone recommend putting a balloon completely over the top of the bottle. If the cap is leaking the balloon will expand. Might have to hit them with another carb drop. As it's been two weeks...

    Carbonation

    What temp are you storing them at? Warmer they are the faster they'll carbonate. Too cold and they won't carbonate at all. Somewhere around 20-21C is what you need.

    This is one of my favorite things about S-04. It settles out nice and fast and really clings to the bottom of the bottle. Easy to get a nice clean pour.

    US04

    I run it at 16 to 20 and get good results. It heats up more than some while working. I have a chill box I ferment in. Takes a little extra ice when the S-04 really gets going. It's fast. Can be mostly done in four days.
