    I finally tasted Freezer Burn yesterday - outstanding. I reckon it has the perfect balance between alcohol, bitterness and hoppiness. And I'll never buy that many hops in one go so it may never be done again. I'll drink it while it's fresh.

    Frozen Yeast

    I have harvested yeast from a brew and put it in a glass jar up the back of my fridge only to have it freeze. I just pulled it out and sat it on the bench a little longer before pitching and it made a great beer.

    Coconut essence sounds like a great idea. The less matter I'm throwing into secondary the better. Plus the article about brewing with coconut mentions much care must be taken to avoid the oils getting in the beer and ruining the head retention. Now to find coconut essence.
