Red Ne-IPA (hopping, yeast and scheduals for the jusiest IPA?)

IMHO it looks like you've made a crossbreed of two different styles. With my understanding of a RIPA and a NEIPA, there are some distinct differences (e.g. sulphide/cholride) which would make it hard to achieve in the same batch. I'm no expert on NEIPA so hopefully others may contribute to this...

    Carbon/ashy taste from element

I had a similar problem a while back. I couldn't find a way to mask the taste but I certainly didn't try everything humanly possible. However, I assure you lagering/cellaring will not remove a burnt flavour. To clean your element - soaking in vinegar and water should lift the char. You can...

Bacchus Brewing Dubbel - a few questions?

That's cool. I agree with much of what you've said ("autolysis card" is very clever, although I've never played it). So given my experience with this specific scenario I use language like "I wouldn't" rather than "Don't" to convey a mere opinion - which is not really a strong one. In any case...

Just how DO you get that juicy IPA taste and aroma?

Air replaces the liquid (say 20% oxygen in air) and a hydro sample draws maybe 200ml? So you've introduced 40ml of O2 into the vessel maybe. I wouldn't expect any issues from that. You're fear of oxygen (while appropriate in some cases) seems disproportionate to the risks here. I bench cap...

Bacchus Brewing Dubbel - a few questions?

I've used M41 on a dubbel and it's fine to ferment at 25°C for that phenolic Belgian character. You'll save on electricity too. I wouldn't primary for 6 weeks. It's best not to leave anything on the yeast cake that long. Do you generally rack to a secondary during fermentation? What's your...

    Carbonation questions

I'd say those two have got this covered but an extra thought is protein. Less protein is less head, whether or not the beer is fizzy. Share your recipe and we'll see if adding a protein might help Garf
