Just trying my first all grain with 5kg Hoepfner pils is this a under modified malt. ( is it necissarry to do a step mash or should I do a Infusion mash) The girly at the HBS didn't have a clue. Cheers

I have always rcked lagers (chasing that clean crisp taste) but never bothered with ales (except to a bulk priming vessel) Is there any benifit, at this stage I am only using safale yeast and that appears to flocculate well...

Im new to brewing And Ive been experimenting with lagers (fermenting outside inthe Perth hills it is almost cold enough). I have been holding my bottled beer at 0 Deg C prioir to bottle conditioning for 2 weeks which to my understanding is Lagering, Hope it works :)
