    Alright, i'll leave it. I just thought that with 12% wheat and about 8-9% caramalt/crystal it might end up tasting far too sweet.

    I must have it wrong, I was under the impression that adding sugar had the opposite effect after it all ferments out, thank you for correcting me! I no chill so putting it in with 60 minutes to go, i understand would have the same effect as boiling is for 75 minutes. I leave beer-smith this way...

    Wy 2206 sluggish start?

    Yeah 2206 can be quite a slow starter (and a slow finisher too). its a bit of a plodder (technical yeast term there). The gravity drop that you have had is completely normal, everything is in slow motion with a lager. What are you brewing? 2206 is a great yeast when you get it right i reckon!

    I have bittered with chinook and perle before and it has come out nice. I havent with cascade though I admit. I havent used these recipes before either. No chill it is said adds bitterness to something like an extra 15 minutes of boiling. These days I am leaning more towards 10 minutes.
