    The Bavarian is reasonable. Years ago my old man made it with 800g of white sugar and put it in crown lager bottles and it was surprisingly drinkable cold out of the bottle.

    A simple tweak is to buy an enhancer with malt in it and compare it to the original. The extra malt will give you more fuller beer with a better head. I found the sparkling coopers kit disappointing but I haven't done the pale ale. I rate the cooper's draught, real ale and the old dark ale.

    Gonzo purchase a stick on thermometer they are pretty cheap and very handy. The gravity on mine started at 1.042 and it was down to 1.018 after 2 weeks and still bubbling so I left it. I have had it happen in the past and the brew was still good.

    You could be right! I find of the nitrogen mix beers the ol' Killer kenny's and Cafrey's are a reasonable formulation. Maybe because they were never a real ale, like Guinness, Tetley's etc...A big night on the nitrogen is up there for maximum hangover!

    Gonzo it will be the mother's milk and not as bitter as the stout. Try another stout with 1.5 kg of liquid malt, safale yeast and a pinch of fuggles.

    Creamy Head On Stout

    Nitrogen is used to give stouts, bitters, etc... on tap a creamy effect but the nitrogen kills the flavour. All malt including some wheat malt helps produce a froathy head. I would drop the priming a fizzy stout isn't true to the style.
