    While the beer will probably (almost certainly) be carbonated and ready at two weeks, try leaving a bottle or two for at least six months and taste it then. Most likely, you'll find it's even better then. :)

    Manticle, I'm thinking of trying that long boil. I'm a sucker for the UK beers. When you say 3hr boil and hop additions as usual, you mean with the usual timings where the hops go in during, say, the last hour or so of those three, right?

    I think your boil looks just fine. Mine is probably a little quieter than that, depending on ambient temp, I think and that's never caused issues. I really like your setup. :)

    A good porter works anytime! Yours looks great, Peekaboo. I always do the same thing; I tend to brew according to what I feel like having, which means I'm always a few months out of sync with what I actually have. Oh well, good beer is good beer anytime. :)

    Cleaning Bottles?

    I wash my bottles with cleaning alcohol and boiling water right after emptying them. Then I take them to my neighbourhood glass-blower, who melts them down and makes me a fresh batch of bottles. I just don't feel it's worth the risk bottling my beer in previously used bottles.

    I almost always leave it to cool down in the fermenter and I've never had a problem. I reckon the temperature of the wort in the fermenter takes pretty good care of any nasties in the first place and I always wash out the fermenter with boiling water before that stage, too.
