I'd like to understand what's happened so could someone explain how infection leads to more carbonation. Is a wild yeast able to ferment sugars that yeasts like S04 and US05 can't?

Not sure what you're getting at? Just making a suggestion (N.B. that's not the same as a criticism). I work during the week and often Saturdays too so I can't make it to a a drop-off that's too far away from where I live. Good luck with your kit!
