    Did I Screw It?

i had a similar experience on my last brew.... re-hydrated yeast in water that was a little colder than it should have been. no airlock activity or kreusen for 24hrs or so, then overnight it turned into a monster :) relax, im sure it'll be just fine!

    Little Creatures Quiet American

Como liquor store got their delivery about half an hour before they closed... i have one chilling right now, ready to crack in a very short while...... oooh, the anticipation...

    Wychwood Bottles

After sampling a few of Wychwoods finest lately i was looking forward to using them nice shapely bottles for my latest batch. Cleaned, rinsed, sterilised etc, and filled with the latest brew, only to find afterwards that my little two handed capper wont cap them due to a nice big bulge beneath...

    Mangrove Jack Cider

We did a blackrock cider not so long ago - loosely based around the Brewcraft 'strongbow' recipe added 500g lactose for sweetness. Its turned out pleasantly sweet and palatable, but the dryness is still there on the back end!.

    First Brew (imperial Stout) Experiences

Ive had this with PET bottles too. Here's my experience using 2 carbonation drops in 740 PET bottles Ive found over the last 18 months of using them that 6 months is about the peak after which carbonation levels seem to start to drop. 9 months they're still good, with an adequate level of...

    Kit N Bits Recommendations

First taste test on this tonight and its turned out wonderful! Lovely golden colour, still with a bit of cloudiness though. Great citrus aroma coming through, lovely velvety blast of hops on the tongue and a sneaky bitter and dry bite right at the end... My small batch of dry hop went on a...

    Cider Not Carbing Up?

i would think at 3 weeks in the bottle it would be about time to 'test' one :) Mine generally last about 2 weeks before i give in to the urge to sample.... Ive done a couple of ciders and bottled with carb drops, and most have turned out reasonably well carbed - the PET bottles still give in...

    Wychwood Beers Of Character Collection

im currently making my way through a similar selection i found at my local beer treasure trove in Perth, minus the blonde Scarecrow was good. and i've not had a hobgoblin in many years since leaving the UK, but oh, how i've missed thee.. Greeted the palate like an old friend..... i think...

    Kit And Extract Beer Spreadsheet

I did the exact same kit a couple of months back, and my OG was also 1.044 - the kit suggest a target OG of 1.048. I put mine down to the fact that i topped up to 22.5L instead of 21L i read somewhere the Brew booster #15 is 500g dex, 250g malt and 250g corn syrup, although someone may correct...

    Thoughts On Extract Recipe

My wife supports my brewing addiction, which is great, but i need to start making more beers that she likes to drink! - She really likes Blue moon, so figured i'd scour the web (mostly US forums) to see what i could come up with - and from reading around, i've settled on something along the...

Recommended Method For Sanitizing Pet Bottles

similar to above with PET bottles - never had any problems in my 12 or so brews. 1. Rinse very well after pouring - (I do this before drinking! :)). Take blue insert-thingy out of cap and rinse them too 2. let dry upside down - normally left on bottle tree until next needed. Caps go in a tub...

    Disappointing First Attempt

seconded for the kit and extract spreadsheet. very very helpful :) i was the same as the OP 12 months ago. Coopers brewing gear and the coopers lager that comes with it was on special in Coles - figured i'd try it - for the same cost of a carton what could go wrong! I too was pretty uninspired...

    Help With Lcpa Style Recipe

i just started sampling the first of my "Brewcraft LCPA" kits this week Followed their recipe pretty closely, except i used a Nottingham yeast instead of US-05, as I'd been having some issues with US-05. brewed 3/3/12, bottled 14/3/12. so only 2 weeks in the bottle, & its quite a nice drop...

    Kit N Bits Recommendations

Thanks for the advice ! update on this one. Reached my FG of 1012 a few days ago... beautiful grapefruit aroma from the cascades, quite a bit more bitter than i expected, but not in a unpleasant way (SO wont like it though!) and this will probably mellow a little. Has a nice malty and citrusy...
