    I think that 80g won't be enough for bittering because it's only 2.8% AA. I think I'll get a small amount of tettenang to help with the bittering a bit and use the hersbrucker for both bittering and later additions at 20 and 10 mins.

    If you are raising the temp for diacetyl rest before the beer has finished fermenting will the yeast not produce some off flavours (ester, etc....).
