I had brass ball valves on my fermenters, after a long time in using them the brass would oxidise leaving a foul taste behind and would taint the whole brew.
To sum it up this maybe happening to you after boiling and with the different chemical used for cleaning would speed the oxidisation...

hey why don't u use a rubber bung with a hole in it you can buy them from brewcraft for a couple of bucks i also have a coopers fermenter with the same grommet and have not seen were to buy them from
