Well I'm glad you lot enjoyed it but that was quite easily the worst night I've had in Melbourne, if not ever.
I was really looking forward to this one as its my last for a few months whilst I do my farm work. Wanted to have a good chat with folks and say my wee goodbyes (temporary albeit)...

Another great meeting with more beers than I thought there would be! I was loving Kris's Pacific Ale Clone (do I get ANY credit for that one? ;-) ) and Kev's Wee Scotch Heavy. All the beers I tasted were great! And I got my parma...
FINALLY got my brew on again yesterday and everything has went sweet as a button!
I'm not entirely sure how this is going to turn out, the base malt profile is for an IPA (but a wee bit darker) and I used whatever hops I had left over, then to top it off I'm using Mangrove Jacks Belgian yeast...
I'll be away picking apples or mandarins or some other type of fruit at this point so won't be able to partake unfortunately. :-( Australia and it's rules for a second visa eh?
@Tex083 - thanks for the recipe! I don't really want a lot of smokiness in the one I'll eventually make, want it to be more caramel sweet.

I think I'll be brewing an IPA of sorts before I get onto the heavier stuff, means I can drink it quicker too. :-)

Dry hopped my brew this weekend (I'm doing it for less days than the recipe stated) and looking to bottle it tomorrow. The smell from the fridge was fantastic! Fingers crossed this one will come out grand.

Well I left it soaking for 24hrs each with sodium metabisulphate, vinegar & starsan. None seem to have done anything! The vinegar was some apple cider stuff my housemate had in the cupboard so probably need to get the full on stuff I'm guessing.
