Not at all dried yeast is easy and you can get good results with it. Also you may want to look at adding some salts & minerals to Burtonise your mash liquor. This will have an effect as well.
For what its worth the only problem I can see from a fine mash is the possibility of a stuck mash due to the compaction of the grist. The tanin issue is not about the size of the grist. :beerbang:
I may be a bit slow but what has an iced up font got to do with the quality of the beer coming out of it. Sounds like style over substance, spend your hard earned on making good beer.

Well I called in to Camperdown on my way home from a holiday on the great ocean road onOct 24th and it wasn`t open then.. Tried one of there IPA`s at the tourist info cafe.. was a nice brew for sure.... cost $7 for 330ml bottle so I`m glad it was nice!!! :icon_cheers:
