What I did

I had planned to add the syrup to about 500ml of boiling water, boil it for a couple of minutes, put it into a second fermenter and rack the beer on to it.
But, when it came to it, it was late and I was feeling lazy so I ended up just heating the syrup to boiling point...
I've done this a couple of times now, here's what I've found:
1. I would definitely use some L/DME unless you planned to water down your beer. An extra litre in 20 is 5% extra volume.

Just a note on the OP's question about bittering,
I'm in my first few months of AG. All of my AG beers (all 4 of them) have been no-chill. My first two were a little over-bittered, and after making some adjustments the last couple have been fine.

I can't see that there would be benefit in leaving hops in the fermenter for extended periods, surely after 3 or 4 days almost all of the aroma would have been absorbed into the beer anyway.
If I dry hop, I do it about 3 days into fermentation, then rack it into a secondary after another 3...

Some good info on causes of all off flavors - chlorine is a possibility - I usually prime new plastic with some PBW and hot water, and then a dose of starsan.
I don't think they'll do you any harm except...
Just to finish this one off, I went for the 21mL borosilicate vials (L6221) as they have an OD of 29mm I figured they'd be OK.
Half the price of the 27mm ones too. Screw caps were an extra $15 and a 5L glass beaker was $36.

I've got a 2L Erlenmeyer flask - however from punching a few examples into the calculator over at Mr Malty it seems like a 5L is going to be more like the minimum I'll need for starters. There's a 5L beaker on proscitech which I might splash out...
