The design will allow the kettles to have a centre drain. I am experimenting minimizing the sump volume to maximize the uptake of grain particles back into the inner mash pot. But I am yet to get any bits into the fermenter and I can taste anything wrong with teh beer so I think the only benefit will be an easier clean.
