Is that a float on the return line, to keep the returning wort entering the grain bed at the top?


Also, on the HLT - why two thermometers?

PS - whole set-up looks rad!
 
That's right it keeps the return line floating on top of the mash. As for the thermometers on the HLT; one is a dial on the front and the other is a probe for the Keg King temp controller.

Ahh so you control temp of the liquor, not of the returning wort. Gotchya.
 
Yeah up here in the Pilbara we don't have a problem maintaining the mash temp, although chilling the wort is a different story.
