    Brewing low alcohol beers

Alternatively, mash low, lots of caramel malt and an attenuative yeast. Have a 3%er on in the shop at the moment from a demo several weeks back. 2700 g ale malt, 500 g crystal malt, mashed at 63-64 deg, about 20 IBU of Target and Fuggles, fermented with Mangrove Jack British Ale yeast - fairly...

    Ideas for 1st extract

Give extract brewing a miss, for the effort involved you will be selling yourself short. What advance is extract brewing over a can kit? It's the same stuff. One of the problems with 100% malt extract beers is that they tend to be overly sweet, especially if you start adding any crystal/caramel...

help, my beer isn't very good.

For the Morgans Export/Premium range the yeast packets were labelled as Ale or Lager (Blue Mtns Lager, Stockman's Draught, Golden Saaz Pils). The yeasts were Mauribrew 514 and 497 respectively. For their Australian range it was the 514 in plain packaging. All the yeasts now for their kits are...

help, my beer isn't very good.

Zardez what is it you don't like about the beer? And what beer kits have you used? And how long was it in the bottle for? With these sorts of questions the first thing to work out is whether there are objective faults with the beer, or whether it is a matter of taste. I once had a customer who...

BB Ale malt - inconsistent size grains?

Very interesting. Sorry I can't offer any solution or explanation, just an observation. I have always found the BB base malts - Galaxy, Pale and Ale, are consistenly far messier to mill than any other malts. The barley variety for both JW Trad Ale and BB Ale is the same, Gairdner. I can't see...

    Wyeast 1968 London Esb Ale

The 1968 is a nice yeast, but I only keg (chronic pre-bottling stress disorder). Have a beer on in the shop with it. Suggestion: before you add a 2nd yeast pull a few bottles and prime them very lightly or not at all. See how they shape up. Pat

    Flat Lager

Carbonation drops take some time to dissolve. Wait for a couple of days after bottling and then invert each bottle a couple of times to mix the dissolved drops. If you don't do this the dissovled drops end up as a thick syrup sitting in the bottom of the bottle. which the yeast will be very slow...
