    Nothing wrong with the last two really. I feel the first was a little light on the roasted malts (around 7%) so I've upped that, and also it was lacking a little body so upped the mash temp a degree and chucked a little more crystal and flaked barley in there..     HDPE plastic container water test..

    You might be right. I have noticed though with a 2 stage rinse of near boiling 90ish degree water that the plastic smell of a new fermenter decreases dramatically. I should have been more clear in my original post about that. Not boiling just above 90.

    The headache part of this really isn't a big deal for me it was just something that came up. The taste is what I'm interested in, as the alcohol will give me a headache for sure!!

    Obviously. Three samples were left overnight. Two fermenters and glass of water. The glass sample was to make sure no bad flavours were getting in through air contact. Just to be sure.

    Thanks for all the suggestions guys, much appreciated. I guess if It Holgate can get away with it so can I! Willamette is just an American development of Fuggles anyhow, I just prefer it. Does the use of lots of low AA hops (E.K. Goldings) for bittering have some big affect on the beer?

    You guys are missing the point.. I don't like fullers ESB. I like every Australian ESB I've had so there must be a difference.. More late hops? More spec malt? cleaner yeast strain?

    Why would i call it an apa? Hargreaves and Holgate using english yeast? I taste roasted malt in both of them, and lots of hops in the Hargreaves (new world). They both don't seem that sweet so I want to be careful with the crystal.
