    What Yeast to use

I find lactose isn't the best option. I find there is a fine line between taking the harsh dry taste out and using too much and having some residual lactose taste. My last few brews I have been using a combination of lactose and supermarket sweeteners (stevia and splenda etc). My last brew I...

    honey in cider

I used 500g of honey in 24L. Bottled about 3 or so weeks ago. The honey taste is rather stong, I'm thinking of 250g next time round.

    Am I doing this right

Buy carb drops. Easier faster a more 'measured' amount. With a 500ml bottle you could go two carb drops. Would have good fizz or one if you only want a small amount of fizz.

    Backsweetening cider/ginger beer with Stevia

Cracked one last night. Very happy with the results. Went down very nicely while cooking the bbq. Wasnt to sweet but wasn't dry either. Had another brew finish a few days ago. This time I have gone for a combination of lactose and equal sweetener. Had a taste, was very nice. Very similar to...

    honey in cider

Hey all. I have heard bits and pieces about people using honey in cider. Is this just away of adding more sugar for a higher alc content or does it change the taste of the cider? Thinking of adding some to my next brew, how much should I be adding? Cheers Adam

    Backsweetening cider/ginger beer with Stevia

Just added 200g of stevia to 25L in drum after fermentation had finished. Left it sit for another few weeks and fg didn't move so I bottled a few days ago. Seems really good. Ill give it a month or so in the bottle and see how it is. I usually go the lactose option but looking forward to trying...

    Help with first cider

Bottled most my brews around 1.015 always had added non-fermentables though (lactose etc) and never had a problem with bottle bombs. Only time I had a few poppers was when I over bottle primed.

    Help with first cider

The golburn valley pear juice makes it cloudy. I use it all the time. Even once bottled and sitting in a dark corner for a few months it stays cloudy. I don't find its anything to worry about. In 500ml bottles I use two carb drobs and no explosion with a nice fizzy. Im fairly basic with my...
