    Heat belt melted

    That's probably your problem right there. Heat belts aren't designed to transfer heat to air, the surface area-to-heat ratio is too low. They are only supposed to be used wrapped around something like a fermenter, which will absord the heat much more quickly.

    Hydrometer is better for QC purposes, because you need to taste the brew to check its progress ;).

    I must be the odd one out. I've NEVER broken a hydrometer (have broken a thermometer though). Instead, I break the tubes they come in. They get squashed or burnt/melted or whatever. I've got about 8-9 of the standard saccharometer type (plus an alcoholometer), but none of the original tubes.

    Couldn't you just put a blast of CO2 through the stone after oxygenating? Surely that would mean it holds CO2 rather than oxygen (if it holds anything -- I have NFI). Can't help with the rest of the questions.
