    Hefeweizen

Thanks for the feedback guys, I've moved it to a warmer room (around 20c) for 3 days & it's still sitting at 1020. I have now stirred gently with a sanitised spoon and added a yeast starter. I can't get anymore T-58 yeast without driving over 1hr so i made the starter with a yeast sachet from...

    Hefeweizen

Sitting at approx 17c. I moved the fermenter into a warmer room for a couple of nights but it's still at 1020. I think the temp range for T-58 is 15-24c. Can't decide whether to bottle or tip it. I don't have any more T-58.

    Hefeweizen

I was expecting it to finish around 1013ish. It's been at 1020 for 6 days.

    Hefeweizen

I threw together a wheat beer consisting of: 1.5kg Coopers Liquid Wheat Malt 1kg Coopers Light Dry Malt 1kg Brewcraft Dry Wheat Malt 25g Hallertau @60mins T-58 Yeast 23L 17-20c OG was 1051 & after 10 days it's sitting @1020. Do you think the ferment is stuck or is this an acceptable FG for a...

    Apa

Putting down an APA this weekend. I usually use S-05 yeast with good results at 18-20c. I`ve run out of S-05, but i have S-04 & S-23 yeast in the fridge i want to use up. Should i use the S-04 or the S-23? Brewing temp will be around 15-17c. What will the differences be compared to using the...

    Imperial Stout

Hey BribieG, I want to make something similar to this as my next brew. What volume did you make that up to in the fermenter, and at what brew temp? Did you just throw the hops in loose after 4 days? I was going to use safale s-04 yeast x 2 packs. Cheers

    Tannin Bitterness

Hey Screwtop, I just thought because i squeezed pretty much every last drop of juice out of my hops and grains that i might have oversqueezed them, adding unwanted flavours/bitterness. og = 1048 fg = 1012 It's the first time i've used Centennial so it may be normal, just my tastebuds freaking...

    Tannin Bitterness

I dont think it's the crystal malt as i steeped 200g in 800ml 65-70c water for 30 mins then added to pot and boiled. Maybe i left the hops in the pot for too long to cool therefore adding excess bitterness? at least my beer will be nice & clear!

    Tannin Bitterness

It's the first time i've used centennial & amarillo. So racking onto gelatine solution and chilling fermenter at 3-4c for a week wont help clear out astringency? am i wasting my time with that? Should i just bottle it & leave it for a month? cheers

    Tannin Bitterness

Hey bum, I think astringency is what i am tasting as i've made & tasted quite bitter beers from kits before (ipa's, stouts etc) which i like. I steeped the crystal at 65-70 from memory & boiled the hops as per recipe. I put the boil pot in laundry sink in iced water for maybe half an hour...

    Tannin Bitterness

Hey Guys, I made Neill's Centenarillo 2 weeks ago & it smells great with nice colour, but when i tasted a sample out of the fermenter it had a bitterish aftertaste to it. I think i may have squeezed my hop or grain bag (i added 200g steeped crystal malt liquid to it) too hard and extracted...

Siborg, You use the unhopped light liquid malt extract cans for this recipe. Cheers.

    Second Brew

As long as you clean, sanitise & rinse your fermenter well, i don`t think it matters if it`s not fully dry before adding your ingredients. I would use the lid and airlock, but if you`re covering with glad wrap you`ll need to prick a hole for the gas to escape while fermenting. 1 packet of...

    Everyone Should Make This

If it comes out between 4.5 - 5.0% i`ll be happy. Just found it strange that i did the recipe exactly but my og was 10 points lower. 3.0 kg Coopers llme 500g Dextrose Same Hop Schedule Same yeast 23l Only diff was the added 200g steeped Crystal malt

    Everyone Should Make This

Hi Neill, Just made this brew up as your recipe + 200g steeped crystal malt. Is the OG of 1058 stated correct? Mine only came out at 1048 OG.

    My Brew Keeps A Bubblin'

Wow that was quick! It just confused me a bit cause the FG was stable for a few days, but because it was still bubbling i thought it was still eating up sugars or something. Thanks warra48, off to bottle now!

    My Brew Keeps A Bubblin'

Hey Guys, I put down a brew 19 days ago consisting of: 1 can Malt Shovel pale ale 1 can Coopers cerveza 250g Capilano honey 25g Amarillo hops steeped for 15mins, strained into fermenter US-05 yeast I know it is probably a weird combination and i have no idea what it will taste like, but it...
