    Fermentation looks like its slowed after day 3

    Have you ever tried a lower temp fermentation? It's what I do for my apple mead. First 3 days at 20 degrees and then down to 10 for around a month before heating it back up to 20 degrees till it's done. You end up with a really sweet mead but still around 12-16%
