    If it is at 1018 now, i would just let it sit in the basement for like 3 more weeks and the bottle it!, more measuring only gives more chance of infection.

    I don't think the starsan did anything, its doesn't actualy harm yeast in normal consentrations, i think you just need time!, my last and only ginger beer took 2 weeks to fully ferment! Best thing you can do is just let it sit, and drive by the gasstation for another gift for your girlfriend ;).

    Higher Attenuation, Lower FG. Some styles seem impossible!

    Try the BE-256 it goes pretty far without having the sta-1 gen.

    Belgian / German Wheat Beer

    I am afraid you cannot make a belgian witbier with a german weisbeer kit, belgian witbier uses unmalted wheat where a weisbeer uses malted wheat, the 2 beer styles are also quite different.
