    NEIPA grain bill?

I heard Scott Janish on a podcast provide this as the base recipe for NEIPAs at Sapwood Cellars: 70% base malt 15% malted wheat 10% oats 5% chit malt Could be worth trying? But as The Mack said, malt bill is just part of the puzzle for a good hazy.

I’ve used 2.8 kg grains in the 10L before. Just took it slowly, stirring a couple of times as filling. Have also used the empty some water out method before when I miscalculated the size of cooked rice for a rice lager.

    Fermenting Fridge Recommendations?

I went for a wine fridge as it is more functional when not in use, can get away with keeping it in the living room and had space to keep plants on top.

Thanks Mark, that would make sense. Just tried again (turning on, no venting) and now can’t hear it spinning at all. When I switch pump off I can hear a slight sound, so makes me think it is blocked from spinning somehow. Visibly everything looks ok so I’m stumped. Have emailed the store I...

Folks any secret to the BM pump? I’ve got a new unit which I’ve had intermittent pump issues with. When I turn it on you can hear it spin for a second then stop for 10, spin again for a second and stop etc. When I get it working (maybe after 5 attempts of disassembling and retrying), I vent the...

    Brewman Dealz

Hi Steve, can I check that all the liquid yeasts on the website marked as 'in stock' are indeed in stock and ready to send out? After some Brett and saison yeast that I can't get locally in Sydney.

    Gushers....(again)

Any correlation between your saison batches and the subsequent batches becoming gushers? I’ve only ever had one batch gush and the previous batch had used a diastaticus saison yeast.

    Reducing Oxidation while Bottling

Glass bottles… the low headspace ranged from about 5mm to 1mm just below the cap. Didn’t notice an obvious difference between them so will stick to 5mm to be safer. Also conditioned and chilled in wine fridge to prevent temp fluctuations. Certainly not be practice but have no access to co2 at...

    Reducing Oxidation while Bottling

Just to add my 2 cents... I bottled a session neipa 6 weeks ago (verdant yeast, 25% malted wheat, dry hop 8g/l) and tried a few different techniques. Results in photo below from left to right are 1) standard head space, 2) standard headspace with SMB, 3) only 1mm or so headspace. Colour change...

    Reducing Oxidation while Bottling

Also look at how/when adding dry hops, as well as preventing oxygen ingress while cold crashing. I’ve always bottled and for me biggest improvement was further upstream changes.
